Sliced chicken breast, romaine lettuce, pico de gallo, tortilla strips, and cotija cheese make up El Pollo Loco's Caesar Salad, but it is the fantastic creamy cilantro dressing that gets the raves. Simply combine these basic ingredients in a bowl and you'll soon have more than 1 cup of the delicious dressing cloned and ready to pour over any of your home salad creations.

This recipe is awesome, it's easy to make and tastes great, everyone wants me to make them a jar. I add parmeasan cheese after all ingredients are blended.

Although this recipe is very similar, It's missing the COTIJA cheese in it. I double the batch, so use about 1/2c. crumbled or throw into mixer with the rest of ingredients.

Yummmm! I've never had it at the restaurant, but LOVE this dressing! We have it with salad including grilled chicken, bell pepper(s), black beans, corn, tortilla chips.

This is a great salad dressing recipe. I am not a huge fan of cilantro but find I can't get enough of this dressing!

I love this dressing. I just threw it all in a blender and blended it up quick to avoid all the chopping and this was fantastic. Our new favorite dressing.

This is wonderful, as a sandwich spread it is great too. Just wear gloves to mince the cilantro!
