I've never met a macaroni & cheese I didn't like - even the stuff that comes in a box with fluorescent orange cheese powder is pretty darn good. But then there are those restaurants that bring this common side dish to a higher level, and there are many variations out there. I've had mac & cheese made with three or four cheeses, and some that come drizzled with truffle oil...mmm. I've had mac & cheese with green pepper in it, and onion, and parsley, and bacon - it all works for me. But at Fleming's Prime Steakhouse, it's about the chipotle. The smoky jalapeno flavor sets this one apart from others, and makes this one of the top side dishes at the upscale steakhouse chain. For our clone, well start with a cheese sauce made with smoked cheddar. There's some minced jalapeno and green onion in there, plus a little ground chipotle pepper. A nice finishing touch comes from the breadcrumb topping that's made with Japanese breadcrumbs, also known as panko, and flavored with more ground chipotle. The cool pasta shape used at Fleming's is called cellentani, which looks like long corkscrews. I had no trouble tracking some down at a Las Vegas Vons. You could also use cavatappi pasta which are shorter corkscrews, or just go for the traditional elbow macaroni which can found pretty much anywhere, including your local mini-mart.

Probably the best mac and cheese recipe out there. The topping sent this one over the top. This worked well with types of pasta but I think that the cellentani is the best.

Love it!! Have started using 1/2 Sargento Chipotle Chedder cheese and 1/2 Smoked cheese and it comes out even better! I am asked to bring it to every party we go to :) Thanks!

Awesome mac & cheese. I added extra chipotle powder because we like it hot! Definitely a keeper.

This was a GREAT one...and I got many, many kudos from friends that frequent Flemings almost weekly. It was quite the compliment for them to say it was the same or better. This is a definite keeper!

This recipe went straight to the top of my must try list and now that I have made it I may never go back to other mac&ch recipes. I added more chiles (serronos) and more chipotle powder because we like spicy hot - the milk products keet it from "over heating". A definite keeper.

This was probably the best made-from-scratch mac & cheese I have ever made. It was easy to make and quite tasty when completed. I especially liked the bread crumb topping and might use that in other casserole dishes. I will definitely try this one again.
