Coffeehouses have replaced many of the old Orange Julius stands, but there's still a nostalgic group of us who long for the frothy juice drinks invented decades ago by Julius Freed. Today Orange Julius has tailored its business to meet the changing demands of its customers by including several varieties of fruit drinks and updated smoothies on its menu. But it's the foamy fruit juice creation developed in the late twenties that made the company famous, and that's what I've cloned here in an improved version that's found in the book Top Secret Recipes - Sodas, Smoothies, Spirits, & Shakes. The flavor and consistency is better now, plus we use the blender to dissolve the sugar before adding the ice. Use pasteurized egg whites found packaged in your local supermarket or just use egg substitute, which is also made from pasteurized egg whites. |

1 1/4 cups orange juice 1 cup water 3 tablespoons egg white or egg substitute 1 teaspoon vanilla extract 1/4 cup sugar 1 1/2 cups ice |

Combine all of the ingredients except ice in a blender and blend on high speed for 15 to 30 seconds or until the sugar is dissolved. Add the ice and blend for another 10 to 15 seconds or so, until ice is mostly crushed yet still a bit coarse.
Makes 2 16-ounce drinks. |

The missing top secret ingredient to every Julius drink is... flat orange pop. Watch them make it when you are at the mall. It took me a but to figure it out. try it and you'll be shocked, promise.

Because I had an orange julius for almost every day for five weeks in the summer (go pacific northwest ballet intensive) i can tell a slight difference. To make it real, use half milk, half water. Naked juice or fresh squeezed works best. Also double the vanilla and add a tad less sugar. It is the real thing.

I remember in the early seventies you had the option of having yours made with a whole egg added to it. I went with this option myself, processing it and the sugar into a zabaglione creme before adding orange juice and water and then the ice. Perfect substitution, and tastes like I remember, if not better.

This recipe is exactly it! The taste is eactly the same but... The first time I made it, I used Tropicana Orange juice because its my favorite but it didn't quite taste right and I knew it was the orange juice. The next day I bought Minute Maid (Simply Orange - the blue one with calcium)and WOW now it tastes perfect!

Cripes! What a great recipe - tastes just like the same thing - and it's not bad for you at all! For you weight watchers people - this is only 3 points for the WHOLE THING, so chalk it up to maybe 1.5-2 pts per serving...good times!
