Did you know that Dave Thomas, the spokesman and founder of the country's third-largest hamburger chain, got his start in fried chicken with a famous Kentucky colonel? That's right, kiddies! In 1962, Dave had an opportunity to turn around four failing KFC carryouts for an ownership stake in the lot of 'em. Dave worked hard and was eventually successful. He then parlayed his new ownership into four more KFC restaurants. In 1968, he sold them all and was handed $1.5 million. Dave was suddenly a millionaire at age thirty-five.

Not one to sit still, just a year later, Dave opened his first Wendy's restaurant, and today the chain is nearly 5000 units strong. Pretty good for a guy who didn't even finish high school, eh?

Here's my conversion of one of the best items on Wendy's bargain ninety-nine-cents menu, but at twenty-five grams( hey, that's four cents per fat gram!), it's just got too much fat, don't you think? Let's knock this one down to just eleven grams, using lean ground beef, fat-free may, and turkey bacon.

1 plain hamburger bun
1/8 pound super lean ground beef (7% fat)
salt
ground black pepper
½ tablespoon fat-free mayonnaise
1 slice fat-free American cheese
2 strips turkey bacon
1 lettuce leaf
1 tomato slice

1. Brown the faces of the bun in a hot frying pan over medium heat. Keep the pan hot.

2. Form the ground beef into a square patty approximately 4 x 4 inches.

3. Cook the patty in the pan for 3 to 4 minutes per side or until done. Salt and pepper each side while cooking.

4. Spread the fat-free mayonnaise on the face of the top bun.

5. Place the cooked patty on the bottom bun.

6. Stack the cheese on the meat.

7. Place the bacon on the cheese.

8. Put the lettuce on next, then the tomato.

9. Top off the sandwich with the top bun. Microwave for 15 seconds on high to warm, if necessary.

Makes 1 Sandwich.
