Hope you're hungry, cause this recipe makes four of the Mexican Pizzas like those served at the Bell: Seasoned ground beef and refried beans are sandwiched between two crispy flour tortillas, topped with melted cheddar cheese, salsa, diced tomato and chopped green onion. Slice it like a pizza and serve with a smile. Prepare to blow your diners away with this one if they're at all familiar with the real thing.

I make the low fat version (you bake the tortillas in the oven) and they are excellent!

I've been making this one since the book came out. It's better than the one at the chain!
