I followed the recipe to the letter and the dough came out so soft, there was NO WAY you could ever roll it even after I had chilled it. The taste was good, but still, the cookies were soft, not crispy like the Ginger Boys.

Very Good Cookies~ I use Plastic Wrap to roll out the dough. Sponge wipe your counter to make plastic stay in place. Lay plastic on counter and flour the surface. Place your dough on the wrap, press the dough out a bit and sprinkle with flour, put another sheet of plastic on top and start rolling.

The dough MUST be chilled before rolling for at least an hour.

Awesome cookies! Be sure to use TONS of flower when you roll then out.
