This 160-unit casual Mexican chain makes a nice tableside guacamole that you can easily duplicate for your amigos. This is the basic formula, so now you can freely adjust it to suit the tastes of your crew. It's also easy to double or more this recipe for a bigger fiesta, if that's the plan. Just be sure to toss (gently!) the avocados into the fridge for an hour or two before you open them up. This guac is much better when slightly chilled.

2 medium ripe avocados, chilled
1 lime wedge
1 tablespoon chopped red onion
1/2 tablespoon minced jalapeno
1 tablespoon chopped cilantro
2 tablespoons diced tomato
1/8 to 1/4 teaspoon salt

1. Mash avocados in a medium bowl, then add the juice of one lime wedge.

2. Stir in onion, jalapeno, cilantro, tomato and salt to taste. Serve with tortilla chips.

Serves 2 to 4 as an appetizer.

Have not eaten at this restaurant but this is an Excellent Recipe!! I did omit the jalapenos and forgot to chill it....but it was great! I will definitely make this again! Make sure the avocados are ripe (brown on outside and soft inside). I also used white onions instead of red.

It does not take a genious to figure out this recipe. I have been making quacamole this way at home for years. Anyone could eat this at the restaurant and figure it our for themselves.

Great recipe! This is almost the same recipe I have been using for years to make my guacamole! The only thing they didn't use is a clove of fresh garlic finely minced, which always goes in mine. Adds a nice twist!

A great replacement for boring sandwich spreads. Tastes excellent on a turkey breast w/ queso sandwich , or better yet add lettuce and wrap in a flour tortilla!
