The Olive Garden chain offers a very popular and delicious tiramisu that is produced outside the restaurants and then delivered fresh to each outlet. Fluffy mascarpone cheese is layered over ladyfingers soaked in a solution of espresso and coffee liqueur, and the dessert is topped with dusting of cocoa. But mascarpone cheese has 13 grams of fat per ounce, and there's nothing that tastes quite like it. However, there is one way to get very close, and its a special creamy combination of Dream Whip, gelatin, and fat-free cream cheese. You can make your own espresso, use extra strong coffee as a substitute, or order a quadruple shot of espresso on your next trip to Starbucks. If you love the traditional Italian dessert, but don't love the fat, you simply must check out this slightly tweaked version of the clone from Top Secret Recipes - Lite! that will create a guilt-free clone to satisfy any tiramisu craving.

1 cup cold low-fat milk (1 percent fat)
1 envelope unflavored gelatin
3 envelopes Dream Whip Mix
4 ounces Philadelphia fat-free cream cheese, softened
6 tablespoons granulated sugar
24 ladyfingers (3-ounce package)
1/2 cup cold espresso (or strong coffee)
1/4 cup Kahlua coffee liqueur
2 teaspoons cocoa powder
1. Measure 1 cup of milk, remove 1/4 cup, and set the rest aside. In a medium bowl, combine the 1/4 cup of milk with the gelatin. Let the mixture sit for 5 to 10 minutes, then microwave on half power for 1 1/2 minutes, or until the gelatin dissolves. Set this mixture aside to cool for 5 minutes.

2. In another medium bowl, beat together the softened cream cheese and the sugar. Add the gelatin/milk mixture and beat until smooth.

3. Pour the remaining milk into a large mixing bowl. Add one envelope of Dream Whip at a time to the milk and beat after each addition for about 2 minutes until the mixture is light and fluffy.

4. While beating the Dream Whip on high speed, add 1/3 of the cream cheese mixture at a time. Mix about 1 minute or until it is well blended and smooth. Set aside while preparing the ladyfingers.

5. Combine the espresso and Kahlua in a large, shallow bowl. One-by-one, quickly dip each ladyfinger in the espresso. The ladyfinger will soak up the espresso/Kahlua mixture like a sponge, so dip quickly.

6. To assemble the tiramisu, arrange half of the soaked ladyfingers side-by-side in an 8x8-inch baking dish. Cover the fingers with half of the cream cheese mixture and spread carefully with a spatula until smooth and flat. Arrange the remaining ladyfingers on the cheese mixture the same way as the first layer. Cover the cake with the remaining cream cheese mixture and smooth.

7. Put a couple teaspoons of cocoa powder into a sieve and tap it over the top of the tiramisu to dust it with a light, even coating of the cocoa. Cover the tiramisu and chill it for at least 3 hours so that it sets up. When you're ready to serve, slice it into 9 even squares.

Tidbits: You can also use reduced-fat cream cheese for this recipe if the fat-free stuff is hard to find. Ladyfingers are small, spongy cakes about the size of two fingers side-by-side, and are usually found in the bakery section of your market. If you can't find them you can also use fat-free Golden Loaf made by Entenmann's. To prepare this pound cake you want to slice it into small pieces. Cut the ends off the pound cake first, then slice the remaining cake into 10 even slices. Discard the end pieces. Cut each slice of cake into thirds and arrange the slices on a wax paper-lined baking sheet. Brush the coffee mixture generously over the top of each cake finger. Turn the fingers over and brush each once more with the coffee mixture and assemble your tiramisu as instructed in steps 6 and 7.
