That makes this recipe the perfect choice for any big game hoedown or festive holiday shindig where you have set your sights on becoming the event’s finger food superstar. You can make the wraps early in the day or even the day before and then fry them off at party time, but I would make the avocado-lime dipping sauce as close to serving time as possible since the avocado in the sauce will brown after a couple hours. This delicious sauce looks best when it’s a nice pale green color. I found it most convenient to use a cheddar and Monterey Jack cheese blend which is easy to find in most stores, but if your market doesn’t have the blend simply use ½ cup each of the two shredded cheeses.
