During the holiday season this particular pancake flavor sells like...well, you know. It's one of 16 varieties of pancakes served at this national casual diner chain. You can make your own version of these delicious flapjacks with a little canned pumpkin, some spices and traditional buttermilk pancake ingredients. Get out the mixer, fire up the stove, track down the syrup.

2 eggs
1 1/4 cups buttermilk

These pancakes are delicious!! The pumpkin flavor is really mild when made as directed, but I added another tablespoon of pumpkin and 1/4 tsp. more of cinnamon, which gave it a vibrant flavor. They're moist in the center, which I thought indicated they were undercooked, but that's how it's supposed to be. These pancakes are so delicious, flavorful, and have a nice aroma. I'll be making these for each autumn and winter to come!

After tasting IHOP's Pumpkin pancakes, I knew we had to find the recipe. This recipe is awesome, the entire family loves it. The only thing I changed - I used 3 heaping tablespoons of the canned pumpkin, so it probably came out to twice as much as the original recipe called for. Thanks so much for this recipe.
