Even though the early press runs of the first book, Top Secret Recipes, excluded buttermilk in this recipe—a very important ingredient if you really want pourable batter—many figured out the missing ingredient on their own and the error was quickly corrected in later copies. Now we just like to call those copies of the book the "Collector's Editions." For any of you who were lucky enough to get one of the "Collector's Editions" we'd like to say "Congratulations!" Now here's the recipe—with the complete list of ingredients—to make pancakes just like those served every day at IHOP.

Nonstick Spray
1 1/4 cups all-purpose flour
1 large egg
1 1/2 cups buttermilk
3 tablespoons granulated sugar
1 1/2 teaspoons baking soda
1/4 cup vegetable oil
1/2 teaspoon salt

1. Preheat a skillet over medium heat. Use a pan with a nonstick surface or apply a little nonstick spray.

2. In a blender or with a mixer, combine all of the remaining ingredients until smooth.

3. Ladle approximately 1/3 cup of the batter into the hot skillet, forming 5-inch circles.

4. When the edges appear to firm up, after a minute or two, flip the pancakes. They should be golden brown.

5. Cook the pancakes on the other side for the same amount of time, until golden brown.

Makes 8 to 10 pancakes.

I used cake flour ( is what I had ), subbed out oil for Kerrygold butter ( Good butter makes a big difference ) also added vanilla extract. I didn't have buttermilk so I added vinegar to 1/2 portion 1% milk and 1/2 portion of half and half ( richer favor ) let it sit for a bit until it just starts to curdle. Pancakes turned out fluffy & FANTASTIC !

This recipe is absolutely amazing. I only changed 2 things and that was to add 1/4 c more of milk to thin the batter out and I used only 2 tbsp of sugar. I'll make these again and again!

This recipe is great. Pretty straight forward and any one should be able to make great pancakes. I would say a rounded teaspoon of baking powder is the right description. Also use melted butter in place of the oil, then skip the butter on top of the finished pancake and just because, add a good dash of vanilla . This is a family favorite of ours.

I hate to be "that foodie" but I must say that I wish that the low raters had just stayed out of the rating portion because some level of culinary flair is required to successfully execute this recipe, and if they rushed or didn't test the optimal heat setting on the first pour, then they wouldn't have a good outcome.

I've made most of the pancake recipes on the big recipe sites and this one is the all around best. The ratios make for a perfect consistency, fluffiness and texture. I've made the recipe exactly as it reads and the only addition I've made is to put vanilla and a bit more salt. Thanks for a great recipe!

I think I've found my go-to recipe for pancakes! These were so delicious and fluffy! They were sweet, but not overly so which I like. I made them exactly as the recipe said, but decided next time to substitute the oil for apple sauce and they came out perfect. For an added health kick, try adding a tablespoon or two of flax seed and cocoa nibs :)

This is literally the best pancake recipe, but it took me a few times and some research to perfect it. First, you have to use real buttermilk. And you shouldn't stir until smooth, there should be lumps and then let the batter sit for 5 minutes. I also put my stove on a 4 -so a medium low heat. The best way to get them to be a perfect brown color is to wait until you see a little steam come up from an UNgreased pan and then flip (don't worry, they're not burning).

The only box pancake mix I tolerate is Aunt Jemima, and to me this recipe reminds me a lot of that brand. These were so good. I added 1 tsp of vanilla extract and 2 mashed banana's to the recipe, as I like banana pancakes. I think that if you were to put walnuts and banana's they would remind me of the banana walnut pankcakes IHOP once had. I will definitely be making these again!

I've been making this recipe for years. I don't buy buttermilk - you can make it by adding 1 1/4 tsp of lemon juice or vinegar to the milk to curdle it. Just let it sit for a couple minutes. Works like a charm!

This is my first time making pancakes from scratch and they werent a failure. I would have added more sugar and salt though, I could taste the baking powder. I've trued scratch revenues before and saw that the pancakes turned our hard even when I didn't overmix the batter, they were soft, fluffy and light! Good recipe, next time I will cater it more to my taste by adding more sugar :)

I'm pregnant with baby #2 and saw an Ihop commercial for pancakes. Instantly I had a craving so I searched the Internet and found this recipe. They were almost identical to Ihop's! So fluffy and delicious, even my 19 month old was eating them faster than I could cook them. This recipe will definitely be a keeper. Oh, and I followed it exactly but used coconut oil as the cookig oil.

Been using this recipe exclusively for several years now. I substitute whole wheat flour, add 1/4 cup of buttermilk and use stevia in place of sugar. Simply makes the best pancakes ever.

I've been making Bisquick pancakes forever... but never again! This is hand's down my favorite pancake recipe. I used whole milk instead of buttermilk and added a teaspoon of vanilla... but otherwise, just followed it exactly. Yum!

These are fantastic pancakes. To the people who normally make pancakes from a box, consider the possibility that your ingredients or inferior or that you didn't do a good job on YOUR FIRST TRY EVER before rating this fabulous recipe poorly. Today was my fifth or sixth time making these and they're always great, I have successfully substituted yogurt for the buttermilk (1:1 + a little more milk) in a pinch.

Like most people I love this recipe. The only thing that I can guess about people who didn't like it is that they didn't use buttermilk or soured milk. The baking soda / baking powder ratio used in this recipe must have a acid component to react with and make the bubbles.

I just made these for my niece and myself, and I thought they were great! I didn't have buttermilk, so I substituted with 3/4 cup of sour cream mixed with 1/4 cup of water, then just 1/4 cup of 2%. Worked just fine! I'll be saving this recipe to my Pinterest.

Omg these are the best pancakes I've ever made and they are way better than 90% of the pancakes you can buy. I didn't have buttermilk so I used regular milk and added a spoonful of sour cream. I added a little vanilla extract, cinnamon, and used brown and powdered sugar. I cooked them in coconut oil. I cut up bananas sprinkled cinnamon and brown sugar on top and caramelized them on the stove. I put that on top of the pancakes and kept some Nutella near by just in case.

Instead of following the cooking directions to a tee, understand that all pans and stoves cook differently. If your pancakes are falling apart when flipping they are not ready to be turned yet. Also, if you pan has hot spots then one side of the pancake may be ready while the other is not. Infrared thermometers are perfect for judging a pan. Hope this helps.

I have been craving pancakes so I tried this recipe based on the reviews. The pancakes turned out perfectly. I did not have any cooking oil so I substituted unsalted butter (melted). I added a dash more of buttermilk so that they would not be too thick and I used raw cane sugar ( a little less than 1/4 cup) I also put in a splash of pure vanilla extract and some freshly ground black walnuts. These pancakes were excellent!! My husband does not care much for pancakes but he said that these were the best.

I don't have the ihop pancake taste memorized to compare, but this recipe comes out great every time. Easy to make and nice fluffy results. Like others I also add a splash of vanilla. I never have buttermilk so I use 2% and a fat tablespoon of sour cream to worm with the baking soda.

Thank you so much for posting this receipe. My Mother's pancakes were the Bomb! Sweet no need for any syrup, I came close in perfecting her receipe. Some of the older generation did not use measuring cups or spoons. Adding vanilla makes the pancakes Yummy!

I rarely have buttermilk, so I always have to do the vinegar/milk substitute. In this case, I did about 2 tsp. apple cider vinegar and 1% milk. Otherwise I followed the recipe. The texture was great! Fluffy and melt in your mouth, but the taste was kind of eggy. Would vanilla help with this??

i had been craving berry pancakes for the longest time, and where i live we dont have very good breakfast eateries; SO glad i read this recipe and decided to give it a try. YUMMMY i also made strawberry sauce using 20 strawberries, 2tbspn sugar, some lemon juice, heated them all in a pan for 10 minutes. spread over pancakes and voila! cravings answerd!

I am also impressed. I wanted a pancake that wasn't tough to cut through, and fluffy. I didn't have buttermilk, so I went with the old stand-by of vinegar in milk. The trick is, whatever the quantity of baking soda is - double it for vinegar. For this recipe, for 1 tsp baking soda, put 2 tsp vinegar. Make sure the dry ingredients are well mixed, dump the wet into the dry and mix quickly but not too aggressively.

I LUV IHop pancakes. Crave them in fact. Found this recipe..took a couple of tries with the heat (to keep from burning them) but have perfected it. They are exceptionally VERY close to IHOP. Now if I can only replicate the "old fashioned" flavored syrup. :)

I thought this recipe was the closest I've had to IHOP but next time I would decrease the amount of sugar ( a little too sweet) and reduce the baking powder and soda ( the flavor of these 2 came out too much in the taste of the pancake). Otherwise, very good and I will make again. THANX

Steve: to make home made buttermilk all you have to do is add 1 Tbsp fresh lemon juice to 1 Cup Milk, stir and let sit for 5 to ten at room temp... Its the acidity your looking for, not just butter and milk, just an FYI! The pancakes are in my opinion the best recipe I have come across in my search for the perfect pancake. I have tried many, and this one is as straight-forward and perfectly moist as any restaurant cake I've ever had! Thank you for the recipe!!!

I loved these pancakes, they were so fluffy. My son, who is a very picky eater loved them too! This recipe got him to eat about double what he usually does at breakfast! I did not have buttermilk so I improvised and made some and they were still the best pancakes I've ever mad e. I'm not sure how close they are to IHOP pancakes because it has been years since I have eaten at an IHOP, but anything my son asks for more of makes me happy!

These are by far the best pancakes I have ever made at home. They do taste like the cakes you get at a restaurant. In used milk instead of buttermilk, but I added a half stick of butter. The butter melts as they cook! The BEST!

We call these "Pancakes of the Gods" and ironically think they're better than the ones at IHOP! When we cook them, we heat the skillet until a splash of water just dances on the surface, doesn't immediately evaporate. We also add the egg last because the chemical reaction makes them fluffy so you want more bubbles right before you put them on to cook. We've been making them this way for years!

I have used this recipe since 1999. After eating these pancakes, you will never purchase the box again. They are quick and easy...Tip: Use Self-rising flour instead and skip the baking powder, baking soda and salt. Also, use melted butter or margarine instead of cooking oil.

I bought an electric griddle just to make these pancakes. I will be returning the griddle. I took 3 bites and in the trash they went. followed the directions to a tee.

I've made this a couple times and today I omitted the oil in exchange for unsweetened applesauce. The pancakes VERY QUICKLY with applesauce, even if I watch them like a hawk. Just a word of warning. :)

Great basic pancake recipe. Added chocolate chips to some of the pancakes,which the kids loved. I don't eat IHOP pancakes, so I can't say whether it the same. But, these pancakes are light, fluffy, and taste great! I will use this recipe again.

I am a VERY picky pancake eater! I have made these many times. I have even made the batter the night before. I have never had bad pancakes. The flavor is even better if you can either shave everything at room temp or mix wet ingredient a few hours before and sit in fridge. I also use half real butter And half oil. Fabulous. FYI burnt or stuck is usually user error. Don't shy away from these they are great!!!

Needed a quick but delicious recipe for homemade pancakes and I came across this site. I substituted regular milk for the buttermilk since I wanted to avoid a trip to the store and the pancakes were still amazing. Definitely worth a try. I can't wait to try with buttermilk.

I followed the instructions and ingredients exactly (used coconut oil as the 'cooking oil' and butter to grease the pan) and they turned out perfectly. They are the most delicious pancakes I've ever made. Not too bready and not bland. They are tasty even before the syrup hits them. I've had pancakes this good (rarely) in some restaurants, but have never been able to get a satisfying result at home. This will now be my default recipe.

An aspiring teen cook. Great & have these for almost every weekend breakfast. Light, fluffy, melt-in-your-mouth goodness. Tip is to have your griddle extra hot before cooking, & to let your batter rest for at least 10 minutes to "relax the ingredients." If you don't have buttermilk, a substitution is 1 cup of milk, & 1 tablespoon of lemon juice. Just mix them together & there you have it.

I have made MANY different batches of pancakes, and I like trying new ones, but definitely NOT impressed with this one. On a skillet, about 2/3-3/4 fell apart when trying to flip. They don't hold their shape/form and crumble too easy.

I made these low cal using splenda in place of sugar, and the lowest calorie yogurt in place of the oil, and added sugarfree caramel flavoring (used for coffee in starbucks, but great for other uses too), or vanilla is good too. These pancakes are the lightest, fluffiest, best pancakes I've ever made! You gotta try em :)

These pancakes are the best that you can make. They are delicate and airy. Very tasty. You can use regular milk with a teaspoon of lime juice or lemon juice and I prefer them with half milk half water. Tell reviewer number 4 and 7 to READ the recipe properly! Good grief! Once again, brilliant recipe! My kids and I love it!

These pancakes were great. I let the vinegar sit in the milk for about 20 minutes before stirring. I added two tsp of vanilla extract and blended everything on the lowest setting for about a minute. I dabbed a little butter on the top of each one before serving. The results were divine. (:

Living in the UK an 8 hour flight from my nearest IHOP I can enjoy a short stack of their famous pancakes here at home. One tip is to get the pancake griddle really hot before starting to cook. The first time I made these I mesed up a few pancakes by not having my griddle hot enough

These were good, but the texture is not as fluffy & soft as are those at my local IHOP and the taste has a slight metallic element. They are more like a Denny's or other diner type pancake. They taste slightly better with only 2-1/2 tsp. of sugar.

I'm seriously shocked, these pancakes were flat out amazing! As a kid growing up if Mom made pancakes they were from store bought mixes like Bisquick; so now at 29 I come across this recipe for homemade IHOP Pancakes and decided to try them - thank God I did cause the family loved them. I also gave the recipe to my Mom and after making them herself she apologized for ever using Bisquick. lol .. Make your pancakes from scratch. Follow these directions to the letter.

Great recipe, and as said below, you can make buttermilk with regular milk and lemon juice/vinegar. Our only problem was the first time we made it we had to put 2 cups of flour in... but that was not really a problem.

This is by far the best pancake recipe out there! I will no longer buy pancake mix from a box again. I know alot of people say add vanilla but honestly.. this recipe taste superb without it. Pancakes are my favorite food in the whole world and this tastes exactly like the pancakes they serve at restaurants.I'm now just having a hard time finding the IHOP syrup but now I just use generic brands.:) Thanks soo much for this recipe.

I'm usually not a pancake person, but I still thought these were AMAZING! If you don't have buttermilk lying around, you can substitute half milk and half unflavored yogurt or let the milk and a tablespoon or so of vinegar sit for a few minutes. I also added a capful of vanilla extract. Best pancakes I have ever made!

Excellent! I love the sweet flavor of this recipe which makes it different than other pancake recipes but very similar to IHOP's. I put the batter in the refrigerator and use it cold. This was great for those of us who love really thick pancakes.

I think everyone should have this recipe in their books. This is the best pancake recipe that I have every come across. I have never had IHOP pancakes so I can't compare. When I mad these for my family I was King for the night, I couldn't make them fast enough. I used 1 1/4 teaspoons vineager instead of buttermilk (this method was mentioned by a previouse review). I added some vanilla and a pinch of something secret. This is a recipe that you can hand down the generations. Thanks for making this one free.

Wow. I made this for my boyfriend and his brothers (19 and 9 yrs old)... and they loved it. I followed Valerie's hint to add vinegar in the milk as a sub for buttermilk. Worked fine (I used white vinegar). Also, used 1% milk and mixed it all in my blender, dry ingredients first. Will be a staple in my house!

Loved it! Folks have most ingredients to make this recipe on hand; with the exception of the buttermilk. A substitute for the buttermilk can be made by whisking 1 teaspoon vinegar(the orange color cider vinegar works best)into 1 cup of milk. This recipe calls for 1 1/4 cups of milk so add 1 1/4 teaspoons vinegar to the milk. Who wants to run to the store for buttermilk?

I had hated pancakes my entire life until an IHOP restaurant opened up near our home and I fell in love. This recipe is it! The only thing I added was a teaspoon of vanilla flavoring. Also, these freeze extremely well. Just individually wrap in plastic wrap and place in a large freezer bag. When time is short and you crave pancakes, just unwrap a couple and microwave for about a minute. Great job on this recipe.

Hey everyone, I loved the pancakes at ihop when I was over in the states (I'm from Belgium) and was looking for a recipe when I saw this one. Jamie Oliver, the British chef, usually tells you to beat the egg white first and then mix it with the rest of the dough. You'll find that the pancakes become very fluffy.

My family owned an IHOP... here is the other part of the secret.. Do not try to get out all the lumps. mix it gently until moistened.. then let the batter rest for an hour or so. When making the pancakes.. poor the batter on a medium-hot griddle and when many bubbles form and the edges begin to get dry looking flip gentley and DO NOT PAT DOWN

I used to ba manager at IHOP so I can vouch for this one... this is about as close as you can get. While I was working there I got sick of eating pancakes and actually lost weight. But since I've left, I missed them terribly. Now I can have them anytime I want. Yay me!!! By the way, IHOP uses Old Fashioned Maple Syrup. I don't know who produced it for them, but if you find a brand that calls it Old Fashioned, chances are you'll be pretty close. Here's another little hint, They are awesome with extra butter and with HOT syrup instead of cold or room temperature syrup. Happy Weight gaining all!!!
