Famous Dave's is famous for making pork ribs so good you forget you're wearing an embarrassing bib. But before your face is smeared with BBQ sauce you may be kicking off your meal with this top pick from the chain's appetizer menu. And if you're a fan of the version at the restaurant you're going to love this clone. Start with 4 ounces of the best smoked salmon you can find - it should be very smoky if you want to duplicate the same taste of the original. If you can't find salmon that's smoky enough, don't worry. I found that adding a little hickory liquid smoke to the mix works perfectly to punch up the spread so that it tastes just like Dave's version. You'll end up with twice the amount of spread as the original which makes this a great appetizer for a small party. You can even prepare the flatbread ahead of time, then wrap it up in foil and reheat it in an oven before serving.

I tried this receipe only because my Son had some frozen fish that we were going to use for a large end-of-summer/fall cookout today.It turned out great.I have always soaked my fish in milk or buttermilk to thaw it out,that may have made a difference.But,everyone thought that we had ordered out for this,even while they were there watching us grill the Steelhead and two Salmon.Thanks Todd
