Menu Description: "Our appetizing cheese dip with seasoned beef. Served with warm tostada chips."

Take your chips for a dip in this top secret take on Chili's Queso Dip that comes to your table in a small cast iron skillet along with a big bowl of tortilla chips. A popular recipe that's been circulating calls for combining Velveeta with Hormel no-bean chili. Sure, it's a good start, but there's more to Chili's spicy cheese dip than that. Toss a few other ingredients into the saucepan and after about 20 minutes you'll have a great dip for picnic, party, or game time.

1 16-ounce box Velveeta Cheese
1 15-ounce can Hormel Chili (no beans)
1 cup milk
4 teaspoons chili powder
2 teaspoons paprika
1 tablespoon lime juice
1/2 teaspoon ground cayenne pepper
1/2 teaspoon ground cumin

Cut the Velveeta into cubes. Combine the cheese with the remaining ingredients in a medium saucepan over medium heat. Stir frequently until the cheese melts, then reduce the heat and simmer for 20 minutes. Serve hot with tortilla chips for dipping.

Serves 6 to 8.

I love it, I think it's great I think it's the closest think to skillet queso but I think it's a bit too spicy. Next time I will try it without so much spice and I think it will be perfect. I used On the Border Tortilla Rounds. They're perfect! Thanks for the recipe!

I made this and it came out perfect. The flavors got better as it rested for about 15 minutes. I used Tostito's Cantina Thin Tortilla Chips and they were perfect! I'll be making this again at home and the next pot luck at work!

Our dip came out a bit too liquid. At our local Chili's dip is more on the thick side, so we recommend about 2/3 or 1/2 cup of milk. We also only used the cheese, chili, and milk.
awsome

It didn't taste like Chili's. The seasoning was really aggressive. I had to use two cans of Hormel Chili. While I think it is okay, it's not the same as Chili's dip.

This recipe is awesome. I've made it twice. After I make it on the stove top, I transfer to a crockpot on low setting so it will stay warm until friends arrive.

In response to Tib Xero about what type of tortilla chips to eat with this, have you ever made your own? All you do is buy corn tortillas, cut them into triangles and fry them in a frying pan with hot oil. Sprinkle salt on them as you drain them on paper towels. You won't belive how good they are when fresh!!! It will be hard to stop eating them. Try it if you're feeling adventurous. They are as good as a restaurant.

Ok, see I tried to replicate it using Wolf Brand Chili. But you normally only find that in the south. Still it's my favorite brand. At any rate, anyone have a prefrence to what brand tortilla chips to serve with this? I've been using generic "Restaurant Style" but I was curious if anyone had any better luck.
