While most restaurant chains attempt to keep their menus simple so as not to tax the kitchen, the Cheesecake Factory's menu contains more than 200 items. Perhaps it's the time spent reading the 17-page menu that leads to the one-and two-hour waits for a table that customers not only expect, but cheerfully endure for lunch or dinner, or just for a taste of the delicious Pumpkin Cheesecake or any other of the 40 cheesecake selections.

Use an 8-inch springform pan for this recipe. If you don't have one, you should get one. They're indispensable for thick, gourmet cheesecake and several other scrumptious desserts. If you don't want to use a springform pan, this recipe will also work with two 9-inch pie plates. You'll just end up with two smaller cheesecakes.

My husband's favorite! I substitute regular graham crackers for cinnamon graham crackers for an extra kick of flavor in the crust :)

I love all things pumpkin, and my absolute favorite is this pumpkin cheesecake. It is so good, and surprisingly easy to to make. I had never made a cheesecake before and now I make this one anytime I want to dazzle people with my baking skills

YUM. So much better than pumpkin pie. Made it for Thanksgiving & it was the first thing gone. The recipe isn't very hard to do. If you have time certainly let it refrigerate for a day before serving to allow the flavors to set in. Tastes so much better the next day.

I don't really like pumpkin pie, but I like this. The recipe basically calls for half a can of pumpkin pie filling (he gives it in cups, but that's what it amounts to). Just use the whole thing. Seriously. This is a huge hit at Thanksgiving celebrations.

I'm not a big cheesecake fan, but when fall comes around I always long for Cheesecake Factory's pumpkin cheesecake. This recipe gets it right on! So yummy!
