Bob Evans Caramel Pecan French Silk Pie

A delectable mixture of pecan pie and french silk pie served seasonally at Bob Evans.
1 9 inch pie crust (deep dish preferrably)
1/2 cup light corn syrup
1 egg, beaten
1/8 cup sugar
1/4 teaspoon vanilla
1/2 cup chopped pecans
6 oz. cream cheese softened
1 cup confectioners' sugar
1 teaspoon vanilla
2 Tablespoons caramel syrup
12 oz. whipped topping (divided)
1 cup chocolate pudding

1. Mix together corn syrup, egg, sugar, vanilla and pecans. Pour into pie crust and cook for 30 minutes at 350. Cool completely.

2. Blend together cream cheese, confectioners' sugar, vanilla, and caramel syrup until smooth. Fold in 4 oz. of whipped topping. Spread over pecan pie layer.

3. Fold 4 oz. of whipped topping into chocolate pudding. Spread over cream cheese layer.

4. Cover with remaining whipped topping (garnishing with chocolate shaving optional).

5. Chill before serving for an hour or two. Keep refrigerated.
