Before your meal at the Benihana chain of hibachi grill restaurants you are served a side salad doused in this tangy, slightly sweet, fresh ginger dressing. When spooned over a simple iceberg lettuce salad this easy clone transforms your bowl of greens into a great start for any meal. Making the dressing is as simple as dumping the ingredients into a blender, whizzing it up, and popping it into the cooler to chill. I've seen many attempts to duplicate this coveted formula, but I think the original clone recipe presented here comes closer to the real thing than any other recipe floating around cyberspace.

1/2 cup minced onion
1/2 cup peanut oil
1/3 cup rice vinegar
2 tablespoons water
2 tablespoons minced fresh ginger
2 tablespoons minced celery
2 tablespoons ketchup
4 teaspoons soy sauce
2 teaspoons sugar
2 teaspoons lemon juice
1/2 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Combine all ingredients in a blender. Blend on high speed for about 30 seconds or until all of the ginger is pureed. Chill.

Makes 1 3/4 cups.

My first impression when I first tasted this was too much vinegar. I noticed a few other reviewers commented on the vinegar-y taste as well so that's the only thing I would adjust. Other than that this was very good and very similar to the ginger dressing at our favorite Sushi place in Wilkes Barre, pa, Katana.

This recipe is sooooo spot on! Tastes just like Benihana's. It was easy to make. I used all fresh ingredients. Delish! My compliments to the chef.

I've never tried the Benihana ginger salad dressing but I love all ginger dressings when I visit Japanese restaurants. My son is 17 months old and just had his first sushi (california roll) and salad. He ate my salad with ginger dressing and my husbands. I wanted to replicate a similar dressing since he enjoyed the flavors so well. I can now get my toddler to eat salad so thank you for this delicious recipe. We will continue to make it in our home! =)

This is pretty good but a little TOO vinegar-y for me. Next time I make it, I will use a bit more ginger, and a bit less vinegar. But other than that, it's good. I would give it an 8 out of 10.

I just made this and I love it! I've dined at Benihana many times as a youth and as an adult...I know this taste and this is pretty close. Consider using this on other salads. I poured this over an edamame salad and it was pretty good.

I really like this recipe, the dressing is fresh and flavorful. Those who disagree must not be using fresh ingredients, as any seasoned cook knows that ultimately, the ingredients make or break your dish. I used Kikkoman Rice Vinegar, the freshest ginger available, and ketchup with no HFCS. I have never been to Benihana, but I'm sure the dressing is no different than other hibachi restaurants! I'm also pretty sure that eating at Benihana, whether it be a one time thing or 'every week'

A good dressing, but it bears no resemblance to Benihana's other than the heavy raw onion aftertaste. Sorry.

This recipe is AMAZING and spot on!! Tastes great fresh and even better after a few days. Highly recommended if you love the dressing at the restaurant! One question I have is could I make it with ground ginger if I don't have fresh ginger on hand? And would I use the same amount?

My friend and I went to a Japanese restaurant and order their salad. It was so good, but we have no idea what the dressing is called. I did a little research and found this recipe. I made it today and it came out exactly the same as expected! Thank you for a great recipe!!!

I think this recipe has much more flavor than benihana's dressing. I agree with previous comments you will lick your finger before yo even chill it:)

I haven't tried this recipe yet, but the fact that peanut oil is an ingredient shouldn't make a difference unless you have an allergy. Peanut oil has a very mild taste and additional health benefits because it is made up of healthy fats including Omega 6. You should try it before you criticize the recipe.

I love this version of the dressing. Mine seemed to have a bit of a kick to it but that's fine with me. Also I used olive oil.

Went to a japanese restaurant last week and was craving this dressing....I haven't even allowed it to chill yet, and I'm already in heaven just licking my fingers! I used a canola blend oil instead of peanut. And my immersion blender was an amazing time saver! Can't wait for my salad!! :)

I hate to be a naysayer, but I ate at Benihana's at least once a month as a child, and this dressing is a far cry from the original. If you have a precise palate, before you buy peanut oil and these ingredients, read my review. I was suspicious mostly of the peanut oil before I made the dressing; I'd be willing to bet there is no peanut in the original. First, I have never tasted peanut oil. Second, peanut oil is not a staple in ginger dressing; canola or vegetable is almost always used.

Love this dressing! I had wanted to recreate it for some time. I used 1/3 sesame oil and 2/3 canola, and thought it tasted great.

I remember when I first went to Benihana back in the 70's and I still remember the dressing. This was just like the real thing. Let it chill for a couple of hours and the taste is amazing, just like I remember.

This is by far the best dressing. It's been years since I've been to Benihana 's but from what I remember, this is spot on. I have wasted so much money testing out different bottled dressings. I am in dressing heaven. Can't wait to serve it family.

Wow! I am in heaven. I have been trying to find this recipe for 8+ years. This is superb. I made the first batch to use as a dipping sauce for a meat fondue. The second batch I am using for green salads.

Out of this world. I have been trying to figure out this recipe for years!! I didn't have peanut oil so I used olive oil and a dab of peanut butter. Worked out fine

This recipe is out of this world. Nothing can top this dressing, ever! I would recommend sesame oil instead of peanut oil which has no discernible flavor. Love it, thanks!

I love this dressing. I've never had the one from Benihana's but "my" sushi bar served a dressing friends claimed was the same. Since moving so far away from my sushi place, I can still have the salad I love from there, without the hefty plane ticket! Try it with grilled chicken or tofu for a full meal.

Ok! I found this site during a period of insomnia........THANK GOODNESS!!! I just tried this recipe, amazing! I used a bit less vinegar and a bit more lemon and I might lower the onion by just a TAD; however, it was soooo close to the original. I would feel confident that no one would be the wiser if I said it came from the restaurant. GREAT WORK!! Can't wait to try another recipe!

This dressing is fabulous! My family thought it was as good as they remembered it from Benihana. When making it in the future, I'll probably reduce the amount of ketchup to 1 1/2 Tablespoons - I could taste the distinct tomato flavor using the full 2 Tblsp.

This recipe is exceptional and delivers the authentic taste of the Japanese Cuisine! I lived in Japan for half my life and have rarely had a recipe that could produce authentic ginger dressing. Bravo - 5 Stars!

i love this recipe, I use it on steak and chicken also, better than steak sauce, more flavorful, and so much cheaper!
