Before your meal at the Benihana chain of hibachi grill restaurants you are served a side salad doused in this tangy, slightly sweet, fresh ginger dressing. When spooned over a simple iceberg lettuce salad this easy clone transforms your bowl of greens into a great start for any meal. Making the dressing is as simple as dumping the ingredients into a blender, whizzing it up, and popping it into the cooler to chill. I've seen many attempts to duplicate this coveted formula, but I think the original clone recipe presented here comes closer to the real thing than any other recipe floating around cyberspace.

1/2 cup minced onion
1/2 cup peanut oil
1/3 cup rice vinegar
2 tablespoons water
2 tablespoons minced fresh ginger
2 tablespoons minced celery
2 tablespoons ketchup
4 teaspoons soy sauce
2 teaspoons sugar
2 teaspoons lemon juice
1/2 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Combine all ingredients in a blender. Blend on high speed for about 30 seconds or until all of the ginger is pureed. Chill.

Makes 1 3/4 cups.

Love this dressing! I had wanted to recreate it for some time. I used 1/3 sesame oil and 2/3 canola, and thought it tasted great.

I remember when I first went to Benihana back in the 70's and I still remember the dressing. This was just like the real thing. Let it chill for a couple of hours and the taste is amazing, just like I remember.

This is by far the best dressing. It's been years since I've been to Benihana 's but from what I remember, this is spot on. I have wasted so much money testing out different bottled dressings. I am in dressing heaven. Can't wait to serve it family.

Wow! I am in heaven. I have been trying to find this recipe for 8+ years. This is superb. I made the first batch to use as a dipping sauce for a meat fondue. The second batch I am using for green salads.

Out of this world. I have been trying to figure out this recipe for years!! I didn't have peanut oil so I used olive oil and a dab of peanut butter. Worked out fine

This recipe is out of this world. Nothing can top this dressing, ever! I would recommend sesame oil instead of peanut oil which has no discernible flavor. Love it, thanks!

This is one of our favorite dressings. Very refreshing... It taste exactly like the restaurant's, but I would add a little less onion.

I love this dressing. I've never had the one from Benihana's but "my" sushi bar served a dressing friends claimed was the same. Since moving so far away from my sushi place, I can still have the salad I love from there, without the hefty plane ticket! Try it with grilled chicken or tofu for a full meal.

I do sushi dinners and when i serve salad I feel this is the perfect compliment. It is very refreshing and if you love ginger like I do then it is the recipe for you!

Delicious dressing - my husband actually likes it BETTER than the real thing! And it doesn't have that yucky after-taste that Benihana's has either.

Ok! I found this site during a period of insomnia........THANK GOODNESS!!! I just tried this recipe, amazing! I used a bit less vinegar and a bit more lemon and I might lower the onion by just a TAD; however, it was soooo close to the original. I would feel confident that no one would be the wiser if I said it came from the restaurant. GREAT WORK!! Can't wait to try another recipe!

This dressing is fabulous! My family thought it was as good as they remembered it from Benihana. When making it in the future, I'll probably reduce the amount of ketchup to 1 1/2 Tablespoons - I could taste the distinct tomato flavor using the full 2 Tblsp.

This recipe is exceptional and delivers the authentic taste of the Japanese Cuisine! I lived in Japan for half my life and have rarely had a recipe that could produce authentic ginger dressing. Bravo - 5 Stars!

i love this recipe, I use it on steak and chicken also, better than steak sauce, more flavorful, and so much cheaper!
