You'll find these easy-to-clone mashers served alongside BJ's new Parmesan Crusted Chicken Breast click here for a clone of that dish, but this is a versatile side that can be served up with tons of home-cooked entrees. You won't need gravy for these rich, flavorful mashed potatoes - just a fork.

2 large russet potatoes
1 cup shredded white cheddar cheese
3/4 cup heavy cream
1/4 cup butter
1/2 teaspoon salt
1/8 teaspoon cracked black pepper
 

1. Peel and quarter potatoes. Boil potatoes in 6 to 8 cups of water in a pot or large saucepan for 30 to 40 minutes or until soft. Strain potatoes, then add them back to the pan and mash thoroughly.

2. Add cheese, cream, butter, salt, and pepper and heat over medium/low heat, stirring often, until thick.

Serves 4 as side dish.

I made thest potatoes exactly as called for in the recipe and served them with BJ's Parmesan Crusted Chicken Breast (also on top secret recipes). I put a little of the sauce served with the parmesan chicken breasts over the potatoes too. This was EXCELLENT! I am usually disappointed when I try recipes because when I'm cooking I expect it to be so much better than it usually ends up tasting.

LOVE THESE. I am a bit pressed for time, so I used instant...and substutued the cream for some of the milk. GREAT!

Wow - great recipe, I added a dash of dried chili flakes and some dried onion flakes - YUM YUM.
